This general term refers to a class of biologically active peptides released from parent proteins by proteolysis (see also: cryptides). Exorphins are named after their exogenous origin and morphine-like activity, being active on opiate receptors. These peptides can have agonist or antagonist activities and thus may play a role as food hormones.
Fukudome and Yoshikawa (1992) have identified exophorphins in enzymatic digests of wheat gluten and named them
gluten exorphin A4 (Gly-Tyr-Tyr-Pro; GYYP),
gluten exorphin A5 (Gly-Tyr-Tyr-Pro-Thr; GYYPT),
