(Ile-Arg-Trp) This tripeptide has been identified in a hydrolysate of egg white ovotransferrin (known also as chicken conalbumin) obtained by treatment with thermolysin / pepsin (Majumder and Wu, 2011). The peptide has been shown to be an inhibitor of ACE [angiotensin-converting enzyme; angiotensin-1 converting enzyme], a key enzyme in the renin / angiotensin system.
